My sister in law and I love cooking with eggplant.  We try to, or I have tried to figure out how one of our local gourmet restaurants creates this delicious layered eggplant dish.  Italian, scrumptious!!!! They use paper thin slices of the eggplant and layer it up like a tall layered cake.  Mozzarella and gravy.  It is my favorite:). enjoy......

 This abstract was painted over another abstract that I wasn t real excited about.  You can see the old one coming through some of these thin layers of paint.  There is a lot of texture.  Am loving it now!
